Surinamese ginger beer is sharp, refreshing and properly gingery, with enough sweetness to soften the heat without losing its bite. Served ice cold, it is one of the most lively homemade drinks you can put on the table.

Ingredients
- Fresh ginger – 200 g
- Water – 2 litres
- Sugar – 180 g
- Lemons or limes – 2
- Cloves – 4
- Cinnamon stick – 1 optional
Method
Peel and grate or blend the ginger very finely so it can release as much flavour as possible. Bring the water to the boil with sugar, cloves and optional cinnamon, then add the ginger and let it steep until the liquid is fragrant and quite punchy. Strain carefully, add the citrus juice and let the drink cool completely. Chill well before serving and pour over ice if you want it extra fresh. Taste before bottling or serving, because some versions are sweeter or sharper than others.
