Surinamese chicken pastries

These festive little Surinamese pastries have a flaky shell and a creamy, gently spiced chicken filling. They are popular at parties and family gatherings because they are rich, fragrant and easy to pass around while still feeling special.

Serves: 10 people

Preparation time: 60 min

Ingredients

  • Chicken breast or thigh – 500 g
  • Onion – 1
  • Garlic – 2 cloves
  • Butter – 30 g
  • Flour – 2 tbsp
  • Milk – 250 ml
  • Chicken stock – 200 ml
  • Parsley – 2 tbsp
  • Nutmeg – 1 pinch
  • Puff pastry – 10 sheets
  • Egg – 1

Method

Cook the chicken until just done and pull or chop it into small pieces. Make the filling by softening onion and garlic in butter, stirring in the flour and then adding milk and stock little by little until you have a smooth, thick sauce. Fold in the chicken, parsley and nutmeg and let the filling cool so it firms up. Line small tins or circles with pastry, spoon in the filling and cover or fold closed. Brush with beaten egg and bake until the pasteitjes are crisp, puffed and deeply golden.
