Surinamese bami often uses spaghetti or sturdy noodles and gets its deep flavour from soy, ginger, celery and well-seasoned chicken rather than a heavy sauce.

Ingredients
- Spaghetti or thick noodles – 400 g
- Chicken thighs – 400 g
- Onion – 1
- Garlic – 3 cloves
- Fresh ginger – 3 cm
- Tomato paste – 1 tbsp
- Salted soy sauce – 5 tbsp
- Sweet soy sauce – 2 tbsp
- Celery – 5 sprigs
- Chinese five-spice – 1/2 tsp
- Sunflower oil – 3 tbsp
- Black pepper – to taste
Method
Cook the noodles until just tender, rinse briefly and set them aside with a little oil so they do not stick. Fry the chicken until browned, then add onion, garlic and ginger and let them soften. Stir in the tomato paste, soy sauces and five-spice and cook until the pan smells savoury and sweet. Add the noodles and toss patiently so the seasoning spreads evenly through the whole pan. Finish with celery and black pepper and serve hot, ideally with sour cucumber or chili on the side.
