Ripe plantain slices fried until caramelised and served warm with a spicy peanut sauce make baka bana one of the most beloved Surinamese snacks. It balances sweetness, heat and salt in a way that is instantly moreish.

Ingredients
- Ripe plantains – 2
- Flour – 100 g
- Cornflour – 25 g
- Water – 150 ml
- Baking powder – 1 tsp
- Salt – 1 pinch
- Oil – for frying
- Peanut butter – 3 tbsp
- Soy sauce – 1 tbsp
- Chili sauce or fresh chili – to taste
- Lime juice – 1 tsp
Method
Whisk flour, cornflour, baking powder, salt and water into a smooth batter. Peel the plantains, slice them lengthwise or on the diagonal and coat them lightly in the batter. Fry until puffed and golden on the outside and soft within, then drain briefly. Make a quick sauce by loosening the peanut butter with a little warm water and seasoning it with soy sauce, chili and lime. Serve the baka bana straight away while the edges are still crisp.
