Barely any ingredients, but a deep soy-savoury flavour makes these noodles perfect for a very fast dinner.

Ingredients
- wheat noodles – 200 g
- soy sauce – 2 tbsp
- dark soy sauce – 1 tsp
- sesame oil – 1 tsp
- spring onions – 2
- white pepper – 1 pinch
Method
STEP 1
Cook the noodles in boiling water until just tender, then drain.
STEP 2
Mix the soy sauce, dark soy sauce and sesame oil in a bowl large enough to hold the noodles.
STEP 3
Add the hot noodles straight to the bowl and toss thoroughly so they take on the sauce while still steaming.
STEP 4
Slice the spring onions thinly and stir most of them through the noodles.
STEP 5
Finish with white pepper and the remaining spring onions.
STEP 6
Serve at once while the noodles are hot and glossy.
