Sun-dried tomato tapenade is intense, sunny and packed with umami. It is perfect when you want bread topping with more punch than plain cheese or sliced meat.

Ingredients
- Sun-dried tomatoes – 150 g, drained
- Parmesan – 40 g, grated
- Pine nuts – 2 tbsp, toasted
- Fresh basil – 1 small handful
- Garlic – 1 clove
- Olive oil – 2 tbsp
- Lemon juice – 1 tsp
- Oregano – 1 pinch
Method
STEP 1
Put the sun-dried tomatoes, parmesan, pine nuts, basil and garlic into a food processor.
STEP 2
Blend while adding the olive oil until the tapenade becomes rich and spoonable.
STEP 3
Season with lemon juice and oregano and taste for balance, because some tomatoes are saltier than others.
STEP 4
Spread the tapenade on toasted bread or use it as a flavourful base under mozzarella, ham or grilled vegetables.
