Sugar-Free Vanilla Pudding

A smooth homemade vanilla pudding thickened on the stove and sweetened without sugar. It is soft, creamy and delicious on its own or with fruit.

Serves: 4 people

Preparation time: 180 min

Ingredients

  • whole milk – 2 cups
  • heavy cream – 1/2 cup
  • egg yolks – 3
  • cornstarch – 2 tbsp
  • powdered erythritol – 1/4 cup
  • vanilla extract – 2 tsp
  • pinch of salt – 1

Method

1. Heat the milk and cream in a saucepan until warm but not boiling.
2. Whisk the egg yolks with the cornstarch, powdered erythritol and salt in a bowl.
3. Slowly whisk some of the warm milk mixture into the egg mixture.
4. Pour everything back into the saucepan and cook over low heat, stirring constantly, until thickened.
5. Remove from the heat and stir in the vanilla extract.
6. Pour into serving bowls and chill until cold.
