Sweet bell peppers are filled with savoury turkey mince, herbs and feta. The result is a bright, oven-baked meal without added sugar.

Ingredients
- large bell peppers – 4
- ground turkey – 1 lb
- olive oil – 1 tbsp
- onion, chopped – 1 small
- garlic, minced – 2 cloves
- diced tomatoes, no sugar added – 1 cup
- feta cheese, crumbled – 3/4 cup
- dried oregano – 1 tsp
- salt – 3/4 tsp
- black pepper – 1/2 tsp
- fresh parsley, chopped – 2 tbsp
Method
1. Preheat the oven to 375°F.
2. Cut the tops off the peppers and remove the seeds.
3. Heat the olive oil in a pan and cook the onion, garlic and turkey until browned.
4. Add the diced tomatoes, oregano, salt and black pepper and simmer for 5 minutes.
5. Stir in half of the feta and the parsley.
6. Fill the peppers with the turkey mixture and place them in a baking dish.
7. Top with the remaining feta and bake for 25 to 30 minutes until the peppers are tender.
