Avocado halves filled with salmon, cucumber and dill make an elegant sugar-free lunch that comes together quickly.

Ingredients
- avocados – 2
- hot-smoked salmon, flaked – 8 oz
- cucumber, finely diced – 1/2
- Greek yogurt, unsweetened – 1/4 cup
- mayonnaise, no sugar added – 2 tbsp
- lemon juice – 1 tbsp
- fresh dill, chopped – 1 tbsp
- salt – 1/4 tsp
- black pepper – 1/4 tsp
Method
1. Cut the avocados in half and remove the pits.
2. Mix the salmon with the cucumber, Greek yogurt, mayonnaise, lemon juice, dill, salt and black pepper.
3. Divide the salmon mixture over the avocado halves.
4. Serve immediately while the avocado is fresh.
