Quick shrimp with bok choy, mushrooms and garlic makes a fast sugar-free dinner full of savoury flavour.
Serves: 4 people

Ingredients
- raw shrimp, peeled – 1 1/2 lb
- bok choy, chopped – 4 small heads
- mushrooms, sliced – 8 oz
- olive oil – 1 tbsp
- sesame oil – 1 tbsp
- garlic, minced – 3 cloves
- fresh ginger, grated – 1 tsp
- tamari or soy sauce, unsweetened – 3 tbsp
- salt – 1/4 tsp
- black pepper – 1/4 tsp
- spring onion, sliced – 2
Method
1. Pat the shrimp dry and season them with the salt and black pepper.
2. Heat the olive oil and sesame oil in a wok.
3. Cook the garlic and ginger for 30 seconds, then add the mushrooms and bok choy and stir-fry for 3 minutes.
4. Add the shrimp and tamari and stir-fry for 3 to 4 minutes until the shrimp are pink and cooked through.
5. Scatter the spring onion over the dish and serve immediately.
