Salmon fillets are oven baked with spinach and a creamy herb cheese topping for a fast sugar-free dinner.
Serves: 4 people

Ingredients
- salmon fillets – 4
- fresh spinach – 5 oz
- cream cheese with herbs – 5 tbsp
- heavy cream – 1/2 cup
- olive oil – 1 tbsp
- garlic, minced – 2 cloves
- lemon juice – 1 tbsp
- salt – 3/4 tsp
- black pepper – 1/2 tsp
- dill, chopped – 2 tbsp
Method
1. Preheat the oven to 400°F.
2. Spread the spinach in a baking dish and drizzle with the olive oil.
3. Stir the herb cream cheese with the heavy cream, garlic, lemon juice, half of the salt and half of the black pepper.
4. Place the salmon on top of the spinach and season it with the remaining salt and black pepper.
5. Spoon the cheese mixture over the salmon and bake for 15 minutes.
6. Finish with dill and serve hot.
