Sugar-Free Omelet Roll with Spinach and Herb Cheese

This fluffy oven omelet is rolled up with spinach and creamy herb cheese. It works for lunch, a light dinner or a savoury brunch dish.

Serves: 4 people

Preparation time: 13 min

Ingredients

  • large eggs – 8
  • heavy cream – 1/4 cup
  • salt – 1/2 tsp
  • black pepper – 1/4 tsp
  • baby spinach – 4 cups
  • olive oil – 1 tbsp
  • garlic, minced – 1 clove
  • herb cream cheese – 5 oz
  • chives, chopped – 1 tbsp

Method

1. Preheat the oven to 375°F and line a small baking tray with parchment paper.
2. Whisk the eggs with the cream, salt and black pepper.
3. Pour the mixture onto the tray and bake for 10 to 12 minutes until just set.
4. Meanwhile heat the olive oil in a skillet and briefly wilt the spinach with the garlic.
5. Turn the baked omelet onto a clean sheet of parchment paper.
6. Spread the herb cream cheese over the omelet and top with the spinach and chives.
7. Roll up tightly, slice and serve warm.
