Sugar-Free Meatballs in Creamy Mushroom Sauce

Tender meatballs are finished in a creamy mushroom sauce with herbs. It is a comforting, family-style dinner made without hidden sugars.

Serves: 4 people

Preparation time: 15 min

Ingredients

  • ground beef – 1 lb
  • egg – 1
  • almond flour – 1/4 cup
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • olive oil – 1 tbsp
  • mushrooms, sliced – 10 oz
  • onion, chopped – 1 small
  • garlic, minced – 2 cloves
  • beef stock – 1 cup
  • heavy cream – 3/4 cup
  • fresh thyme – 1 tsp

Method

1. Mix the ground beef with the egg, almond flour, half of the salt and half of the black pepper. Shape into small meatballs.
2. Heat the olive oil in a skillet and brown the meatballs on all sides. Remove them from the pan.
3. Cook the mushrooms, onion and garlic in the same skillet until soft.
4. Add the beef stock, cream, thyme, remaining salt and remaining black pepper.
5. Return the meatballs to the pan and simmer for 10 minutes until cooked through and the sauce is lightly thickened.
6. Serve hot with vegetables or cauliflower mash.
