A fresh chilled tart with quark, lemon and a nutty crust. It tastes bright and creamy, with no added sugar in the filling or the base.
Serves: 8 people

Ingredients
- almond flour – 1 1/2 cups
- butter, melted – 1/4 cup
- erythritol – 1/4 cup
- quark or full-fat Greek yogurt – 2 cups
- cream cheese – 8 oz
- lemon zest – 2 tsp
- lemon juice – 3 tbsp
- powdered erythritol – 1/3 cup
- gelatin powder – 2 tsp
- cold water – 2 tbsp
Method
1. Mix the almond flour with the melted butter and erythritol and press the mixture into the bottom of a tart tin or springform pan.
2. Chill the crust while you prepare the filling.
3. Sprinkle the gelatin over the cold water and let it bloom for 5 minutes.
4. Beat the quark, cream cheese, lemon zest, lemon juice and powdered erythritol until smooth.
5. Warm the gelatin gently until dissolved and mix it into the filling.
6. Spread the filling over the crust and chill for at least 4 hours until firm.
7. Slice and serve cold.
