A fresh egg salad with radish, chives and mustard that works well as a light lunch or filling for lettuce cups.
Serves: 4 people
Preparation time: 15 min
Ingredients
- eggs, hard-boiled – 6
- mayonnaise, no sugar added – 1/3 cup
- Greek yogurt, unsweetened – 2 tbsp
- Dijon mustard – 1 tbsp
- radishes, finely chopped – 4
- chives, chopped – 2 tbsp
- celery, finely chopped – 1 stalk
- salt – 1/2 tsp
- black pepper – 1/4 tsp
Method
1. Chop the hard-boiled eggs and place them in a bowl.
2. Add the mayonnaise, Greek yogurt, Dijon mustard, radishes, chives and celery.
3. Season with the salt and black pepper and stir until creamy but still textured.
4. Chill for 15 minutes before serving.
