Sugar-Free Creamy Pumpkin Soup

A velvety pumpkin soup with onion, garlic and a touch of cream. It is comforting, naturally sweet from the pumpkin and made without any added sugar.

Serves: 4 people

Preparation time: 25 min

Ingredients

  • pumpkin, peeled and diced – 1 1/2 lb
  • onion, chopped – 1 large
  • garlic, minced – 2 cloves
  • olive oil – 1 tbsp
  • vegetable stock – 4 cups
  • heavy cream – 1/2 cup
  • ground nutmeg – 1/4 tsp
  • salt – 1 tsp
  • black pepper – 1/2 tsp
  • pumpkin seeds – 2 tbsp

Method

1. Heat the olive oil in a soup pot and cook the onion and garlic until soft.
2. Add the pumpkin, stock, nutmeg, salt and black pepper.
3. Bring to a boil, then simmer for 20 minutes until the pumpkin is very tender.
4. Blend the soup until smooth.
5. Stir in the cream and warm the soup gently without boiling.
6. Serve in bowls and sprinkle with pumpkin seeds.
