A silky chocolate mousse made with dark sugar-free chocolate and whipped cream. The texture is rich and airy while the flavour stays deeply chocolaty.

Ingredients
- sugar-free dark chocolate – 5 oz
- heavy cream – 1 cup
- large eggs, separated – 2
- powdered erythritol – 2 tbsp
- vanilla extract – 1/2 tsp
- pinch of salt – 1
Method
1. Melt the chocolate gently and let it cool slightly.
2. Whip the cream until softly thick and keep it chilled.
3. Beat the egg yolks with the vanilla extract, then stir in the melted chocolate.
4. Whisk the egg whites with the powdered erythritol and salt until soft peaks form.
5. Fold the whipped cream into the chocolate mixture, then gently fold in the egg whites.
6. Spoon into dessert glasses and chill for at least 3 hours before serving.
