Tender chicken, avocado and celery make a creamy sugar-free lunch salad without needing sweet dressings.
Serves: 4 people

Ingredients
- cooked chicken breast, shredded – 3 cups
- avocados, diced – 2
- celery, finely chopped – 2 stalks
- mayonnaise, no sugar added – 1/3 cup
- Greek yogurt, unsweetened – 2 tbsp
- lemon juice – 1 tbsp
- chives, chopped – 2 tbsp
- salt – 1/2 tsp
- black pepper – 1/4 tsp
Method
1. Place the chicken, avocado and celery in a bowl.
2. Mix the mayonnaise with the Greek yogurt, lemon juice, chives, salt and black pepper.
3. Fold the dressing through the chicken mixture carefully so the avocado keeps some texture.
4. Serve chilled.
