Sugar-Free Broccoli Soup with Aged Cheese

Broccoli soup with aged cheese is savoury, creamy and filling enough for a simple sugar-free lunch.

Serves: 4 people

Preparation time: 20 min

Ingredients

  • butter – 1 tbsp
  • onion, chopped – 1 medium
  • broccoli florets – 6 cups
  • vegetable stock, unsweetened – 4 cups
  • heavy cream – 1/2 cup
  • aged Gouda, grated – 3/4 cup
  • salt – 3/4 tsp
  • black pepper – 1/4 tsp
  • nutmeg – 1/8 tsp

Method

1. Melt the butter in a soup pot and cook the onion for 3 minutes.
2. Add the broccoli, stock, salt, black pepper and nutmeg and simmer for 15 minutes.
3. Blend the soup until smooth.
4. Stir in the heavy cream and half of the aged Gouda.
5. Serve the soup hot and sprinkle the remaining aged Gouda over each bowl.
