Roasted butternut filled with savory mince, bacon and melted cheddar is hearty, rich and crowd-pleasing.

Ingredients
- small butternut squash – 2, halved
- ground beef – 12 oz
- bacon – 4 slices, chopped
- onion – 1 small, chopped
- cheddar – 1 cup, grated
- olive oil – 1 tbsp
- paprika – 1 tsp
- salt – to taste
- black pepper – to taste
Method
STEP 1
Roast the butternut halves at 400°F for 35 to 40 minutes until tender.
STEP 2
Meanwhile, fry the bacon until lightly crisp. Add the onion and ground beef and cook until browned.
STEP 3
Season with paprika, salt and black pepper.
STEP 4
Spoon the meat mixture into the roasted butternut halves, top with cheddar and bake for 8 more minutes until melted.
