Steak with Peppercorn Sauce

A straightforward brasserie plate of well-seared steak with a creamy green peppercorn sauce, fries and salad.

Serves: 4 people

Preparation time: 25 min

Ingredients

  • beef steaks – 4
  • butter – 2 tbsp
  • green peppercorns in brine, drained – 2 tbsp
  • brandy – 2 tbsp
  • beef stock – 3/4 cup
  • heavy cream – 2/3 cup
  • Dijon mustard – 1 tsp
  • black pepper – to taste
  • salt – to taste
  • fries, cooked – 1 3/4 lb
  • green salad – 1 small bowl

Method

1. Bring the steaks to room temperature, season them with salt and black pepper, and sear them in 1 tablespoon of butter until cooked to your liking. Rest them on a warm plate.
2. Add the remaining butter to the pan and briefly cook the green peppercorns. Pour in the brandy and let it reduce for a few seconds.
3. Add the beef stock, cream and mustard and simmer until the sauce thickens slightly.
4. Return any resting juices from the steaks to the sauce, spoon it over the meat and serve with fries and salad.
