A Sri Lankan red lentil soup with coconut milk, curry leaves and mild spices.
Serves: 4 people

Ingredients
- red lentils – 1 cup
- coconut milk – 1 cup
- water – 4 cups
- onion, chopped – 1
- garlic, chopped – 2 cloves
- fresh ginger, grated – 1 tsp
- turmeric – 1/2 tsp
- curry powder – 1 tsp
- curry leaves – 10
- mustard seeds – 1/2 tsp
- oil – 1 tbsp
- lime juice – 1 tbsp
- salt – to taste
Method
1. Rinse the lentils and cook them with the water, onion, garlic, ginger, turmeric, curry powder and salt until soft.
2. Add the coconut milk and simmer gently for 5 more minutes.
3. Heat the oil in a small pan and splutter the mustard seeds with the curry leaves.
4. Pour the spiced oil into the soup and stir well.
5. Finish with lime juice and serve hot.
