Fresh spinach salad with fruit, nuts and goat cheese, adapted into a Dutch-friendly recipe.

Serves: 4 people

Preparation time: 13 min

Ingredients

  • Baby spinach – 150 g
  • Apple – 1 large
  • Goat cheese – 100 g
  • Pecans – 60 g
  • Red onion – 0.5
  • Olive oil – 3 tbsp
  • Apple cider vinegar – 2 tbsp
  • Honey – 1 tsp
  • Salt – to taste
  • Black pepper – to taste

Method

STEP 1
Toast the pecans lightly in a dry pan. Slice the apple thinly and the onion very finely.
STEP 2
Whisk olive oil, apple cider vinegar, honey, salt and pepper into a dressing.
STEP 3
Arrange spinach, apple and red onion in a bowl. Top with pecans and crumbled goat cheese. Drizzle over the dressing.
