Crispy fried soft-shell crab, creamy avocado and cool lettuce make this dramatic inside-out roll crunchy, rich and irresistibly fresh.

Ingredients
- Japanese short-grain rice – 300 g
- Rice vinegar – 60 ml
- Sugar – 2 tbsp
- Salt – 1 tsp
- Nori sheets – 2
- Soft-shell crabs – 2
- Cornstarch – 50 g
- Oil – for frying
- Avocado – 1
- Little gem lettuce – 4 leaves
- Japanese mayonnaise – 2 tbsp
Method
Cook and season the rice and cool. Dust the cleaned soft-shell crabs with cornstarch and fry until crisp; drain well. Spread rice over nori, flip, add lettuce, avocado and the warm crab, roll firmly and cut into bite-sized pieces.
