Spider roll with soft-shell crab and lettuce

Crispy fried soft-shell crab, creamy avocado and cool lettuce make this dramatic inside-out roll crunchy, rich and irresistibly fresh.

Serves: 2 people

Preparation time: 60 min

Ingredients

  • Japanese short-grain rice – 300 g
  • Rice vinegar – 60 ml
  • Sugar – 2 tbsp
  • Salt – 1 tsp
  • Nori sheets – 2
  • Soft-shell crabs – 2
  • Cornstarch – 50 g
  • Oil – for frying
  • Avocado – 1
  • Little gem lettuce – 4 leaves
  • Japanese mayonnaise – 2 tbsp

Method

Cook and season the rice and cool. Dust the cleaned soft-shell crabs with cornstarch and fry until crisp; drain well. Spread rice over nori, flip, add lettuce, avocado and the warm crab, roll firmly and cut into bite-sized pieces.
