Spicy tuna roll with sriracha and sesame

Fresh, fiery and irresistible: sashimi-grade tuna gets a spicy sesame kick in this bold sushi bar favorite.

Serves: 2 people

Preparation time: 25 min

Ingredients

  • Japanese short-grain rice – 300 g
  • Rice vinegar – 60 ml
  • Sugar – 2 tbsp
  • Salt – 1 tsp
  • Nori sheets – 2
  • Sashimi-grade tuna – 200 g
  • Spring onions – 2
  • Sriracha – 1 tbsp
  • Mayonnaise – 1 tbsp
  • Sesame oil – 1 tsp
  • Toasted sesame seeds – 1 tbsp
  • Cucumber – 1/2

Method

Cook and season the sushi rice; cool until workable.
Finely chop the tuna and mix with sliced spring onions, sriracha, mayonnaise, sesame oil and sesame seeds.
Spread rice over nori, add cucumber strips and the spicy tuna mixture, then roll tightly.
Slice into pieces and serve cold with soy sauce and pickled ginger.
