Spiced, crisp biscuits with brown sugar and warm winter aromatics.

Serves: 24 people

Preparation time: 75 min

Ingredients

  • flour – 2 cups
  • brown sugar – 3/4 cup
  • butter – 1/2 cup
  • milk – 2 tbsp
  • cinnamon – 2 tsp
  • ginger – 1/2 tsp
  • cloves – 1/4 tsp
  • nutmeg – 1/4 tsp
  • baking powder – 1/2 tsp
  • salt – 1 pinch

Method

1. Rub the flour with the butter, then add the sugar, spices, baking powder, salt and milk.
2. Knead into a firm dough and chill for at least 1 hour.
3. Roll out the dough thinly and cut into biscuits.
4. Place on a lined baking tray.
5. Bake at 175°C for 12 to 15 minutes until firm and fragrant.
6. Cool completely so they turn crisp.
