Special shoarma pita

This Dutch takeaway-style shoarma pita is all about contrast: spiced meat, crunchy salad and a sweeter onion sauce that makes the whole thing feel familiar and comforting. It is a proper snack-bar classic, but it also works surprisingly well as a complete lunch or easy dinner.

Ingredients

  • Pork loin or pork tenderloin, in strips – 500 g
  • Bell pepper, in strips – 1
  • Onion, sliced – 1
  • Shoarma spices – 1 tbsp
  • Sunflower oil – 2 tbsp
  • Wholemeal pita breads – 8
  • Iceberg lettuce – 1/2 head
  • Tomatoes – 3
  • Sweetcorn – 150 g
  • Extra onions for sauce – 2
  • Tomato puree – 1 tbsp
  • Ketchup – 2 tbsp

Method

1. Toss the pork with shoarma spices, salt, pepper and a little oil. Slice the pepper and onion so they cook at the same pace as the meat.
2. Fry the onions and pepper briefly, then add the meat and cook until browned and just cooked through.
3. For the onion sauce, cook the extra onions gently until soft, then stir in tomato puree and ketchup. Let it reduce until it becomes spoonable and slightly sweet.
4. Shred the lettuce and combine it with chopped tomato and sweetcorn.
5. Warm the pita breads, fill them with salad and hot shoarma, then finish with the onion sauce.
