Tender pork and beef meatballs simmered in tomato sauce are hearty, deeply savoury and ideal when you want a warming tapas plate.
Serves: 6 people
Preparation time: 20 min
Ingredients
- Minced beef – 250 g
- Minced pork – 250 g
- Egg – 1
- Breadcrumbs – 40 g
- Garlic – 3 cloves, minced
- Parsley – 2 tbsp, chopped
- Onion – 1 small, chopped
- Crushed tomatoes – 400 g
- Tomato puree – 1 tbsp
- Olive oil – 3 tbsp
- Paprika – 1 tsp
- Salt – to taste
- Black pepper – to taste
Method
STEP 1
Mix the beef, pork, egg, breadcrumbs, half of the garlic and half of the parsley with salt and pepper. Shape the mixture into small walnut-sized meatballs.
STEP 2
Heat 2 tablespoons olive oil and brown the meatballs on all sides over medium heat. Transfer them to a plate once they have colour.
STEP 3
Add the remaining oil to the same pan and cook the onion until soft. Stir in the rest of the garlic, the paprika and the tomato puree and cook for 1 minute.
STEP 4
Add the crushed tomatoes and 100 millilitres water, bring to a gentle simmer and return the meatballs to the pan.
STEP 5
Cook for 15 to 18 minutes until the meatballs are done and the sauce has thickened. Sprinkle over the remaining parsley and serve hot.
