Sour cherry compote

A simple glossy sour cherry compote that belongs next to waffles, rice pudding, pancakes or classic Belgian meat dishes.

Serves: 6 people

Preparation time: 10 min

Ingredients

  • jarred sour cherries with juice – 2 cups
  • sugar – 1 to 2 tbsp
  • cornstarch – 1 tbsp
  • cold water – 2 tbsp
  • lemon juice – 1 tsp
  • cinnamon stick – 1

Method

1. Pour the sour cherries with their juice into a small saucepan and add the sugar, lemon juice and cinnamon stick.
2. Bring the fruit gently to a simmer and let it cook for 3 to 4 minutes so the flavors blend.
3. Stir the cornstarch smooth with the cold water and whisk it into the cherries.
4. Simmer briefly until the compote is glossy and just thick enough to coat a spoon.
5. Remove the cinnamon stick and serve the compote warm or let it cool completely before chilling.
