Solyanka (Russian sour meat soup)

Solyanka is a bold soup with mixed meats, pickles, tomato and olives. Its flavor is rich, salty-sour and very distinctive.

Serves: 4 people

Preparation time: 50 min

Ingredients

  • beef stew meat, diced – 10 oz
  • smoked sausage, sliced – 7 oz
  • ham, cut into strips – 5 oz
  • onion, finely chopped – 1 large
  • pickles, sliced into half-moons – 4
  • tomato paste – 2 tbsp
  • water or beef stock – 7 cups
  • bay leaves – 2
  • black olives, sliced – 3 1/2 oz
  • capers – 2 tbsp
  • lemon, cut into wedges – 1
  • sour cream – 1/2 cup
  • oil – 1 tbsp
  • black pepper – 1/2 tsp
  • dill, chopped – 2 tbsp

Method

1. Heat the oil in a large pot and brown the beef on all sides. Add the onion and cook for 3 minutes.
2. Stir in the tomato paste, then add the water or stock and the bay leaves. Simmer gently for 35 minutes.
3. Add the smoked sausage, ham, pickles, olives and capers and let the soup cook for 10 more minutes.
4. Season with pepper and remove the bay leaves.
5. Serve the soup with dill, a spoonful of sour cream and a wedge of lemon.
