A hearty cold pescotarian salad with smoked mackerel, potatoes, apple and dill.
Serves: 4 people

Ingredients
- Waxy potatoes – 900 g
- Smoked mackerel fillets – 250 g
- Apple – 1
- Red onion – 1/2
- Celery – 2 stalks
- Dill – 15 g
- Greek yogurt – 120 g
- Mayonnaise – 3 tbsp
- Wholegrain mustard – 1 tbsp
- Lemon – 1
- Black pepper – to taste
Method
Boil the potatoes until tender and cool slightly.
Mix yogurt, mayonnaise, mustard and lemon juice. Flake the mackerel and dice the apple, onion and celery.
Combine everything with dill and black pepper. Chill before serving.
