Peppery greens, sweet raspberries and rich smoked duck create a stylish salad that feels light yet unmistakably indulgent.

Ingredients
- Smoked duck breast – 250 g
- Frisee or mixed leaves – 150 g
- Raspberries – 125 g
- Walnuts – 60 g
- Shallot – 1 small
- Red wine vinegar – 1 tbsp
- Olive oil – 3 tbsp
- Dijon mustard – 1 tsp
- Black pepper – to taste
Method
Toast the walnuts lightly and let them cool.
Whisk shallot, red wine vinegar, Dijon and olive oil into a sharp dressing.
Arrange the salad leaves with slices of smoked duck and raspberries.
Scatter over the walnuts, season with black pepper and drizzle with the dressing just before serving.
