Smashed avo is modern Australian cafe culture on a plate: rough mashed avocado with lemon on toasted bread, finished simply so the fruit stays the star.

Ingredients
- Ripe avocados – 2
- Fresh mint, chopped – 2 tbsp
- Lemon juice – 1 tbsp
- Rye bread – 4 slices
- Feta, crumbled – 80 g
- Salt and black pepper – to taste
Method
1. Scoop the avocado into a bowl and mash it roughly with a fork. You want texture, not a puree.
2. Add the chopped mint, lemon juice, salt and pepper, and mix just until combined.
3. Toast the bread until golden and crisp at the edges.
4. Spoon the smashed avocado generously over the toast and scatter over the feta.
5. Serve immediately. A dish this simple depends on ripe avocados and good bread, so both are worth getting right.
