Scampi in a light garlic and wine sauce with parsley, elegant yet easy and full of Adriatic charm.
What is škampi na buzaru?
Škampi na buzaru is an Adriatic dish with scampi or langoustines in a light sauce of wine, garlic and parsley. It focuses on pure shellfish flavour and a sauce that begs for bread.

Ingredients
- Large scampi or langoustines – 800 g
- Olive oil – 3 tbsp
- Garlic – 4 cloves
- White wine – 200 ml
- Parsley – 3 tbsp
- Breadcrumbs – 1 tbsp
- Cherry tomatoes – 150 g
- Salt – to taste
- Black pepper – to taste
Method
STEP 1
Heat the olive oil and gently cook the garlic. Add the scampi and cook for 1 minute per side.
STEP 2
Pour in the wine and add the tomatoes. Let everything simmer for 3 to 4 minutes.
STEP 3
Finish with parsley and breadcrumbs and season with salt and pepper. Serve hot with bread or polenta.
