Sweet raisins and pine nuts sound unusual in a mussel pan, yet with mint and white wine they create a very Sicilian sweet-savoury balance.
Serves: 6 people

Ingredients
- Fresh mussels – 1.8 kg
- Olive oil – 3 tbsp
- Onion – 1 small, finely chopped
- Garlic – 2 cloves, sliced
- White wine – 150 ml
- Golden raisins – 40 g
- Pine nuts – 40 g, toasted
- Fresh mint – 2 tbsp, torn
- Parsley – 2 tbsp, chopped
- Black pepper – to taste
Method
STEP 1
Soak the raisins in a little hot water for 10 minutes so they plump up, then drain them.
STEP 2
Clean the mussels while the raisins soak.
STEP 3
Cook the onion and garlic in olive oil until soft. Add the wine and raisins and let the liquid come to a simmer.
STEP 4
Add the mussels, cover and steam them until opened.
STEP 5
Finish with the pine nuts, mint, parsley and black pepper just before serving.
