A clean, bright classic with lemon, parsley and olive oil that lets the rich texture of swordfish do all the talking.

Ingredients
- Swordfish steaks – 4
- Lemon juice – 60 ml
- Olive oil – 80 ml
- Garlic – 3 cloves
- Flat-leaf parsley – 4 tbsp
- Dry white wine – 60 ml
- Oregano – 1 tsp
- Salt – to taste
- Black pepper – to taste
Method
Whisk together lemon juice, oil, garlic, parsley, wine and oregano. Marinate the swordfish for 20 to 30 minutes. Grill over high heat until marked outside and just cooked in the centre. Spoon over the remaining dressing before serving.
