Shrimp, zucchini and rice noodle bowl

A quick pescotarian noodle bowl with shrimp, zucchini, garlic and lime.

Serves: 4 people

Preparation time: 50 min

Ingredients

  • Rice noodles – 250 g
  • Raw shrimp – 400 g
  • Zucchini – 2
  • Carrot – 2
  • Garlic – 3 cloves
  • Spring onions – 3
  • Soy sauce – 3 tbsp
  • Fish sauce – 1 tbsp
  • Lime – 2
  • Sesame oil – 1 tbsp
  • Neutral oil – 2 tbsp
  • Chili flakes – to taste

Method

Cook the noodles according to the package and drain.
Stir-fry shrimp in oil until just cooked. Add garlic, zucchini ribbons and carrot and cook briefly.
Add soy sauce, fish sauce, lime juice and sesame oil. Toss with noodles and top with spring onions and chili.
