North Sea shrimp folded into a luxurious cream filling and fried until crisp: a Belgian café classic that always feels festive.

Ingredients
- Butter – 60 g
- Flour – 60 g
- Fish stock – 250 ml
- Milk – 200 ml
- North Sea shrimp or small prawns – 250 g
- Cream – 50 ml
- Gelatin leaves – 2
- Eggs, beaten – 2
- Breadcrumbs – 120 g
- Lemon – 1
Method
Make a thick roux-based filling with stock, milk and cream, then fold in the shrimp and soaked gelatin. Chill until firm, shape into croquettes and coat with egg and breadcrumbs. Fry until golden and serve with lemon wedges and parsley.
