Earthy shiitake and crisp asparagus bring savoury depth and spring freshness to this elegant vegetarian sushi roll.

Ingredients
- Japanese short-grain rice – 300 g
- Rice vinegar – 60 ml
- Sugar – 2 tbsp
- Salt – 1 tsp
- Nori sheets – 4
- Shiitake mushrooms – 150 g
- Asparagus spears – 8
- Soy sauce – 1 tbsp
- Sesame oil – 1 tsp
- Sesame seeds – 1 tbsp
Method
Sauté the shiitake with soy sauce and sesame oil until concentrated and cool. Blanch the asparagus briefly. Spread rice on nori, add the mushrooms and asparagus, roll tightly and slice; sprinkle with sesame.
