A thick colourful roll packed with savoury shiitake, tender asparagus and plenty of texture. Beautiful for brunches, platters or spring dinners.

Ingredients
- Japanese short-grain rice – 300 g
- Rice vinegar – 60 ml
- Sugar – 2 tbsp
- Salt – 1 tsp
- Nori sheets – 4
- Shiitake mushrooms – 150 g
- Green asparagus – 8 spears
- Soy sauce – 1 tbsp
- Sesame oil – 1 tsp
Method
Cook and season the rice and let cool. Sauté sliced shiitake with soy sauce and sesame oil and blanch the asparagus. Spread rice over a full sheet of nori, add the shiitake and asparagus in the centre and roll into thick futomaki. Slice with a sharp wet knife.
