A rustic Russian cabbage soup with potato, carrot and plenty of dill: simple ingredients, soothing broth and true winter comfort.

Ingredients
- White cabbage – 500 g
- Potatoes – 3
- Carrot – 1
- Onion – 1
- Butter – 25 g
- Vegetable stock – 1.5 l
- Bay leaf – 2
- Black pepper – 1/2 tsp
- Dill – 1 handful
- Sour cream – to serve
Method
Sweat onion and carrot in butter. Add cabbage and cook briefly until slightly softened.
Add stock, bay leaf and potatoes, then simmer until the vegetables are tender.
Season with pepper and stir in most of the dill.
Serve hot with sour cream and the remaining dill.
