Sesame Soy Tuna Avocado Poke Bowl

This bowl leans into the nutty side of poke, with soy-marinated tuna, toasted sesame and creamy avocado woven through crisp fresh toppings.

Serves: 4 people

Preparation time: 25 min

Ingredients

  • Sushi rice – 300 g
  • Rice vinegar – 3 tbsp
  • Tuna, sushi grade – 350 g
  • Soy sauce – 2 tbsp
  • Lime juice – 1 tbsp
  • Sesame oil – 1 tsp
  • Avocado – 1
  • Cherry tomatoes – 150 g
  • Spring onions – 2
  • Nori strips – 2 tbsp
  • Peanuts or cashews, chopped – 40 g
  • Mayonnaise – 3 tbsp
  • Sriracha – 1 tsp

Method

STEP 1
Rinse and cook the sushi rice. Once it is done, fold through the rice vinegar and let it cool until it is pleasant to eat.
STEP 2
Mix the mayonnaise and sriracha for a quick spicy mayo and keep it chilled.
STEP 3
Dice the tuna and toss it lightly with soy sauce, lime juice and sesame oil. Halve the cherry tomatoes, slice the spring onion and cut the avocado just before serving.
STEP 4
Assemble the bowls with rice, tuna, avocado and tomatoes, then add the nuts and nori for texture.
STEP 5
Drizzle on a little spicy mayo instead of drowning the bowl in it. The tuna should still taste like tuna.
