Grießklößchensuppe is a mild German broth soup with fluffy semolina dumplings. Its gentle flavour makes it especially suitable for children or light lunches.

Ingredients
- milk – 1 cup
- butter – 2 tbsp
- semolina – 3/4 cup
- egg – 1
- nutmeg – 1/4 tsp
- parsley, chopped – 2 tbsp
- chicken broth – 6 cups
- carrot, diced – 1 medium
- leek, sliced – 1 small
- salt – 1 tsp
- black pepper – 1/4 tsp
Method
1. Bring the milk, butter and a pinch of salt to a simmer and stir in the semolina until a thick paste forms.
2. Let the mixture cool slightly, then beat in the egg, nutmeg and parsley.
3. Bring the broth gently to a simmer with the sliced vegetables.
4. Shape small dumplings with two spoons and poach them in the broth for 8 to 10 minutes until puffed and tender.
5. Serve the soup hot with extra parsley.
