This soothing Seminole porridge-drink sits somewhere between soup and gruel, warm and comforting in the gentlest possible way.
Serves: 6 people
Preparation time: 15 min
Ingredients
- Water – 2 l
- White rice – 300 g
- Cornstarch – 3 tbsp
- Baking soda – 1 tsp
- Salt – 1/2 tsp
Method
Bring the water to a boil in a large pot.
Add the rice and cornstarch and stir well so the starch does not clump.
Boil gently for about 12 minutes.
Lower the heat and stir in the baking soda and salt.
Cook until the rice is very tender and the sofkee has a loose porridge consistency.
Serve warm in mugs or bowls.
