A saffron rice dish with seafood and peas, naturally gluten-free when made with pure stock and spices.

Serves: 4 people

Preparation time: 45 min

Ingredients

  • Olive oil – 2 tbsp
  • Onion – 1
  • Garlic – 2 cloves
  • Smoked paprika – 1 tsp
  • Paella rice – 320 g
  • Saffron – 1 pinch
  • Fish stock – 900 ml
  • Tomatoes – 2
  • Peas – 120 g
  • Mixed seafood – 500 g
  • Lemon – 1
  • Parsley – 1 handful

Method

STEP 1 Soften onion and garlic in olive oil and add smoked paprika.
STEP 2 Stir in the rice, saffron and tomatoes, then pour in the stock.
STEP 3 Simmer without stirring until the rice is nearly tender. Add peas and seafood.
STEP 4 Cook until the seafood is done and the rice is cooked. Finish with lemon and parsley.
