Raw scallops give this bowl a softer, sweeter kind of luxury. Lime, soy and sesame keep the flavor clean and very bright.

Ingredients
- Raw scallops, suitable for serving raw – 300 g, thinly sliced
- Sesame oil – 4 tsp
- Soy sauce – 4 tbsp
- Black pepper – to taste
- Mixed salad greens – 4 handfuls
- Carrots – 2, cut into thin sticks
- Flat-leaf parsley – 1/2 bunch
- White sesame seeds – 4 tbsp
- Lime zest – from 1 lime
- Lime juice – from 1/2 lime
- Olive oil – 1 tbsp
- Cooked rice – 500 g
Method
STEP 1
Make sure the scallops are safe to serve raw and keep them very cold. Slice them thinly and return them to the refrigerator while you prepare the rest.
STEP 2
Whisk the sesame oil, soy sauce and a few turns of black pepper together. Toss the carrots, parsley, lime zest, lime juice and olive oil separately so the vegetables stay fresh and bright.
STEP 3
Arrange the rice in bowls and add the salad greens. Lay the scallop slices over the top and spoon the soy-sesame dressing over them just before serving.
STEP 4
Finish with the carrot mixture and plenty of sesame seeds. Serve immediately so the scallops stay delicate.
