This bright pink Lithuanian soup is served cold and gets its refreshing flavor from beet, cucumber and kefir or buttermilk. It is perfect for warm weather.

Serves: 4 people

Preparation time: 30 min

Ingredients

  • cooked beets, grated – 14 oz
  • cucumber, finely diced – 1
  • green onions, sliced – 4
  • dill, chopped – 3 tbsp
  • kefir or buttermilk – 4 cups
  • sour cream – 1/2 cup
  • hard-boiled eggs – 4
  • lemon juice – 1 tbsp
  • salt – 1/2 tsp
  • black pepper – 1/4 tsp

Method

1. Put the grated beets in a bowl and mix them with the cucumber, green onions and dill.
2. Stir in the kefir and sour cream until you have a smooth, lightly creamy soup.
3. Season with lemon juice, salt and pepper.
4. Chill the soup for at least 30 minutes so it becomes thoroughly cold.
5. Serve in bowls with the halved hard-boiled eggs.
