Inspired by Denny's salad with herb-garlic grilled salmon, cucumbers, grape tomatoes, cheddar and croutons on iceberg mix.
Serves: 2 people
Preparation time: 25 min
Ingredients
- Salmon fillets – 2
- Garlic – 1 clove
- Olive oil – 2 tbsp
- Dried herbs – 1 tsp
- Iceberg mix – 180 g
- Cucumber – 0.5
- Grape tomatoes – 150 g
- Cheddar cheese – 75 g
- Croutons – 60 g
- Lemon juice – 1 tbsp
- Balsamic or ranch dressing – 120 ml
- Salt – to taste
- Black pepper – to taste
Method
STEP 1
Rub the salmon with olive oil, garlic, herbs, salt and pepper. Grill or pan-sear until just cooked.
STEP 2
Arrange the iceberg mix, cucumber, tomatoes, cheddar and croutons on a platter.
STEP 3
Flake or slice the salmon and place on top.
STEP 4
Finish with lemon juice and serve with dressing of choice.
