Elegant hand-pressed sushi with glossy salmon on top shows how a few excellent ingredients can feel truly luxurious.

Ingredients
- Japanese short-grain rice – 300 g
- Rice vinegar – 60 ml
- Sugar – 2 tbsp
- Salt – 1 tsp
- Sashimi-grade salmon – 180 g
- Wasabi – to taste
Method
Cook and season the sushi rice and cool until barely warm.
Slice the salmon into neat, thin rectangles.
Wet your hands, shape small oblongs of rice, add a tiny dab of wasabi and drape a slice of salmon over each one.
Press lightly to secure and serve immediately.
