A classic centrepiece of salmon wrapped in pastry with herbs and spinach: polished, festive and easier than it looks.

Ingredients
- Salmon fillet side – 800 g
- Puff pastry – 500 g
- Spinach – 250 g
- Shallot – 1
- Cream cheese – 120 g
- Dill – 2 tbsp
- Lemon zest – 1 tsp
- Egg – 1
- Butter – 20 g
- Salt – to taste
- Black pepper – to taste
Method
Wilt the spinach with shallot and butter, squeeze dry and mix with cream cheese, dill and lemon zest. Wrap the salmon and filling in pastry, brush with egg and bake until golden. Rest briefly before slicing.
